So I am visiting my cousin in Denton, Texas. I usually am around for her birthday, and we tend to cook a lot when I am visiting.
She told me she had been wanting to try Meatloaf Cupcakes. My husband wont eat meatloaf (blasphemy) so I don’t get to eat it too often.
I love meatloaf, my mom taught me well in making a good moist meatloaf.
I know what you are thinking, Meatloaf= Big Bunch of eww. But you would be surprised if you knew how to put it all together how eww would go to yumm.
Meatloaf can be made from pretty much any ground meat. I typically use beef. Ground Round is the best,
If you don’t do red meat, try ground turkey.
What’s great about packaging them in a cupcake tin, is you can make it ahead, make sure to wrap each hole in the tin with plastic wrap, add the mixture, and freeze, take out each frozen cupcake with the plastic wrapped around to seal in. Now you can make individual meatloaf cupcakes. Great for when you have a husband who doesn’t do meatloaf, a quick fix for dinner, make ahead meals for when your spouse is out of town.
2 lbs Ground Round Beef
One Medium White Onion (small dice)
4 tbs yellow mustard
4 tbs Worcestershire sauce
1 cup bread crumbs
1 cup cheese (whatever your preference, optional)
Mix everything together in a bowl. Allow to sit and marinate for 20 minutes or so.
We bacon wrapped our cupcake tin. 1 piece of bacon cut in half but used for 1 cupcake, wrap it around the cupcake tin. Use a Ice cream scoop to heap beef mixture into the cupcake tin, being careful not to cause the bacon to squish on the sides.
Baked at 375 degrees Fahrenheit for 20-25 minutes.
Great topped with Mashed Potatoes (like frosting for meat)
We had it with a squash/peach sweet medley, mashed potatoes, and baking powdered biscuits.
You can top your individual meatloaf with Ketchup or BBQ sauce of your choice.
