Portioning in Baking

I have had a lot of people ask me how my cupcakes come out all alike. Simple, portioning.

I utilize ice cream scoops, Scoopers like above to provide even portions in each cupcake, mini cupcake, cookie, that I do. Unfortunately, the above scooper, my favorite one, broke. Pampered Chef sells this one, as well as 2 larger sizes. This one above is great for the mini cupcakes, mini cheesecake, mini cookies. Apparently, I am too  rough with my kitchen stuff.

But if you are wondering if these work, yes they do!

“Those are my flowers” Spongebob Cake Progress

So I started on the under the sea flowers for the Spongebob Birthday cake today. A lot of Tedious work. 15 of each color,. My daughter on the other hand thought they were “pretty” and that they were “hers”.  Now if only I  could keep her from touching them. I also started the leaves for the top of the pineapple portion. Although I’m not sure if they will be sturdy, hence me making them now to allow them to dry hard, and easily stand up (I hope…) I am preparing for the worst. Considering I’m stacking about 6 little cakes on top of each other for the pineapple and two of those don’t look that great after carving them. My backup plan is to get a dowel or two in order to keep the pineapple from falling.  Everyone keeps asking how or necessarily why I do so much work for a cake? Well, I truly enjoy the results that I get once it is done. It’s a special moment knowing that I made that cake for my daughter. My father used to make my cakes when I was little, so carrying on a tradition is a BIG deal.

My cakes are in the freezer, Need to get a large cake board (or make one myself), a small bottle of vodka— (no not what you were thinking it was for…) for painting on the cake….Still need to give Spongebob Legs, and Arms…His face will be one of the last things I do….

No, I did not make this, nor did my family. We had wayy too much food to cook.  Haha Later post for you to peruse. How to cook for at least 75 people. and the extras that show up for the free food. (HA)

Oatmeal Cookies

Baking Book

I got this book from my mom. “Mom’s Big Book of Baking”

I have used many a recipe. Not all of them are great, I was a bit disappointed with quite a few.

So I attempted to make the Oatmeal Cookies:

Preheat Over 350 Degrees Fahrenheit.

Combine Flour, Baking Soda and Salt.

Combine Sugars, Melted Butter. Add in Eggs and vanilla.

Add Flour Mixture to Sugar Mixture.

Then Add Oats and any add ins you may want.

Oatmeal

Chill for at least 20 minutes. I use a cookie scoop, but a tablespoon full is the recommended size for cookie dough. When you are done putting cookie dough on the cookie sheet, put the remaining cookie dough back in the fridge.

Bake for 10-15 minutes, It varies based on how crispy you want your cookie. 🙂
